Street food Chimichurri — the authentic version
The best Chimichurri I've ever had came from a street stall, not a restaurant. The intensely beefy and smoky intensity was completely different — more direct and uncompromised. Malbec wine was used without hesitation, the way it should be.
Argentina consumes more beef per capita than almost any other country. The a Sunday asado in a friend's garden setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Malbec was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
