Holiday memory — Mac and Cheese that transported me back

I first ate Mac and Cheese on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the bold and smoky quality I remembered. sourdough bread was handled correctly — something most restaurants here get slightly wrong.

American cuisine is a mosaic of immigrant traditions adapted over generations. It was the a classic diner memory that I was really chasing and this recreated it. root beer was offered and brought the whole experience together. Some dishes are attached to a time and place.
