Cultural discovery through Qorma

Qorma opened a door into a cuisine I'd previously known almost nothing about. The hearty and rice-forward flavours are unlike anything in my usual rotation and I mean that positively. Afghan hospitality tradition demands feeding guests regardless of the host's circumstances. Understanding that context made the dish taste different — richer with meaning.

I learned that dried sour grapes kishmish is central to this cuisine's character, not just a seasoning. The an Afghan restaurant abroad setting was authentic and helpful for understanding what I was eating. fresh pomegranate juice completed the picture. A genuinely educational meal.
