There's a big gap between bad Kefir and great Kefir and it's mostly about quality of the source. Prepared hot with care, the result is something genuinely special — the calm alertness is pronounced and the experience is noticeably better than the everyday version.

I spent some time learning proper technique and it paid dividends immediately. Once you know what good looks like you can't go back to cutting corners. Worth the small investment in knowledge.
